Recipe: Cheese Puff Potatoes
- 12 medium potatoes
- 6 tbsps butter or margarine
- 2 ¼ cups Cheddar cheese (grated)
- 1 – 1 ¼ cups milk
- 3/4 tsp fine grind sea salt
- 2 eggs (beaten)
Preheat oven to 350 degrees.
Peel potatoes; cook in salted water until tender.
Drain and mash thoroughly.
Add butter, cheese, milk and salt.
Heat over low heat until butter and cheese are melted.
Fold in eggs.
Pour into a greased 13 x 9 x 2 inch baking dish.
Bake at 350 degrees for 30-45 minutes or until puffy and golden brown.
