Recipe: Clam Puffs
Clam Puffs Recipe
- 2 51 ounce can Sea Watch chopped clams, drain and reserve juice
- 2/3 cup butter
- 2/3 cup celery, minced
- 14 eggs
- 6 cups breadcrumbs
- 1 pint cream
- 1/3 cup lemon juice
- 2 tsp parsley, chopped
- 1 tsp salt
- 1 tsp paprika
- 1 tsp white pepper
- 1 cup milk
- 2 cups flour
To make Clam Puffs
Puff Mixture:
- Saute onion, and celery until tender. Drain off liquid.
- In a large bowl, combine the clams, clam juice, celery, onion, lemon juice, parsley, spices, cream, 2 eggs, and 2 cups of breadcrumbs.
- Chill for 1 hour.
To make Egg Coating
- Combine the remaining 12 eggs and 1 cup of milk, blend together.
- Form puff mixture into silver dollar sized balls.
- Roll in flour; dip into egg mixture, coat with remaining breadcrumbs.
- Deep fry for approximately 10 minutes at 350°. Serve warm.
