Recipe: Cornish Hens with Rice
- 1/2 cup wild rice
- 1/2 cup white rice
- 1 medium onion, chopped
- 3 tbsps butter
- 1/3 cup slivered almonds
- 1/2 cup dried sliced mushrooms
- 1/2 tsp salt
- 1/2 cup sauterne
- 4 Rock Cornish game hens
- Preheat oven to 400 degrees.
- Cook rice in rapidly boiling water until tender.
- Saute onion in 2 tbsps butter 5 mins; remove from pan.
- Saute almonds in 1 tbsp butter 5 mins.
- Lightly mix rice, onion, almonds, mushrooms, salt and wine.
- Stuff hens with mixture; truss.
- Place in shallow roasting pan and bake 1 hr.
