Recipe: Creamy Onion and Bacon Soup
- 1 or 2 slices bacon
- 2 tbsps pecans or walnuts
- 1 onion, chopped
- 1/2 tbsp flour
- 3/4 cup chicken broth
- 1/4 cup milk
- 1/4 cup shredded spinach
- 1/16 tsp pepper
- 1/16 tsp ground nutmeg
- 5 drops Tabasco sauce
- shredded sharp Cheddar cheese to garnish
- shredded radish to garnish
- shredded green or red onion to garnish
- Fry bacon in skillet until crisp; remove and drain bacon.
- In same skillet, brown nuts and onion in the bacon fat.
- Stir in flour, then gradually stir in chicken broth and milk.
- Cook and stir until thickened.
- Stir in spinach, pepper, nutmeg and Tabsco sauce.
- Garnish with shredded cheese, radishes, and onions.
