Recipe: George River Salmon
- 4 (1 inch) thick salmon steaks
- 3 tbsps Dijon mustard
- salt and white pepper to taste
- 1/2 cup dry wine
- 2 tbsps olive oil
- Preheat oven broiler.
- Mix the oil, mustard, wine, salt and white pepper together in a small bowl.
- Add the salmon steaks to the sauce and marinate in the refrigerator for 2 hours, turning often.
- Place the steaks on a buttered piece of foil, on a broiler pan.
- Place the steaks 4 inches from heat source and broil until they flake, about 10 mins.
- At least twice during cooking, brush with marinade.
- Garnish with parsley.
