Recipe: Mandarin Salad
- 1/4 tsp sea salt
- 2 tbsp sugar
- 1/4 cup canola oil
- Dash Tabasco Sauce
- 2 tbsp vinegar
- Dash white pepper
- 1 tbsp snipped parsley
- 1/4 cup sliced almonds
- 1 tbsp sugar
- 1/2 tbsp butter
- 1/4 head lettuce
- 1/4 head romaine
- 1 cup chopped celery
- 2 green onions with tops, thinly sliced
- 1 can mandarin oranges, drained
- Cook almonds and 1 tbsp sugar plus1/2 tbsp butter over low heat, stirring constantly until sugar is melted and almonds coated.
- Cool and break apart. Put in air tight container.
- In plastic bag, put lettuce pieces, celery, and onion. Fasten and refrigerate.
- Make dressing by combining sea salt, 2 tbsp sugar, canola oil, Tabasco, vinegar, white pepper, and parsley together and refrigerate.
- When ready to serve, mix all ingredients together.
Makes 4-6 servings. |
