Recipe: Roast Pork with Lemons and Oranges
- 2 loins of pork, 7 chops each
- 4 anchovy fillets, cut into 4 pieces each
- 6 tbsp butter
- 1/2 tsp dried thyme
- 1 tsp powdered mace
- 1 tsp sea salt
- 1/2 tsp white pepper
- 2 onions, sliced thin
- 1 lemon, sliced thin
- 1 orange, sliced thin
- 1 cup dry white wine
- 2 cups beef broth
Make slits in meat with knife and insert anchovies. Mix 4 tablespoons butter, thyme, mace, salt and pepper into a paste and spread over top and sides of meat. Spread remaining 2 tablespoons butter in bottom of roasting pan and place meat in it. Alternate in bottom of pan around meat, the onions, lemons and oranges. Roast in 400° oven for 30 minutes. Add 1/2 cup broth and all the wine. Add more broth as needed throughout cooking. Reduce temperature to 350° and roast for 2 hours. You may use liquid as sauce, if desired. |
