Recipe: Sally Lunn Bread
- 4 1/2 cups all purpose flour
- 1/3 cups sugar
- 1 tsp salt
- 1 1/2 tbsp active dry yeast
- 1 1/4 cups milk
- 1/2 cups butter or margarine
- 3 beaten eggs
- Measure flour into large bowl. Com-bine 2 cups flour, sugar, salt and yeast in a large bowl of electric mixer. Stir well.
- Heat milk and butter until very warm (120-130° F).
- Gradually add to dry ingredients and beat at low speed (2 minutes) scraping sides of bowl.
- Add eggs and 1/2 cup flour and beat 2 minutes at medium speed.
- Using wooden spoon, gradually stir in remaining flour to make a soft dough.
- Cover and let rise 1 hour or until doubled.
- Stir down with spoon into greased and floured 10" tube pan, cover and let rise 1 hour or until doubled.
- Bake at 400° F for about 30 minutes.
- Turn out and cool on rack.
- Serve warm with fresh butter and jam.
