Recipe: Spaghetti Carbonara
- 1/4 lb bacon
- 2 tbsps olive oil
- 1/2 stick butter
- 2 cloves garlic, crushed
- 2 cups thin strips ham
- 1 8oz pkg spaghetti, cooked
- 1/3 cup Parmesan cheese
- 1 tbsp dried parsley flakes
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 eggs, beaten
- 1/2 cup ripe olives, sliced
- 2 pimentos, sliced
- parsley for garnish
- Brown bacon; drain, crumble and reserve.
- Pour off excess fat.
- Add oil, butter, garlic and ham to pan and saute lightly.
- Add spaghetti, bacon, cheese, parsley, salt and pepper; mix well.
- Turn off heat.
- Pour eggs over and toss quickly to coat evenly.
- Add olives and pimentos and toss again.
