Recipe: Texas Corn Bread
- 1 cup yellow cornmeal
- 1/2 cup flour
- 1 tsp salt
- 1 cup buttermilk
- 1/2 tsp baking soda
- 1 tbsp baking powder
- 1 egg, beaten
- 1/2 cup canola oil
- 1/2 cup milk
- Heat oven to 450° F.
- Grease a 9" baking pan or cast iron skillet and place it in the oven for 2 or 3 minutes before pouring in the batter.
- Mix cornmeal, flour, salt, baking soda, and baking powder.
- Add remaining ingredients, mixing only until combined.
- Pour into hot pan.
- Bake until golden brown on top, approximately 25 minutes.
- Do not under cook it. The bread will be moist, yet brown on the bottom.
