  1. Mix liquid smoke, garlic powder, onion powder, and celery salt. Spread on all sides of brisket.
  2. Wrap brisket in heavy foil and refrigerate 12-24 hours.
  3. Preheat oven to 250°
  4. Remove roast from refrigerator, open foil and sprinkle both sides with salt, pepper, and 1 tsp worcestershire sauce.
  5. Seal tightly, place package in roasting pan and bake at 250° for 5 hours.
  6. Uncover and pour barbecue sauce over the meat and bake another hour.
  7. Remove from ove, and allow to stand at room temperature with foil still sealed for about 30 minutes before slicing.
Yield: About three servings per pound
