Recipe: Apricot Nut Bread

  1. Preheat oven to 350 degrees
  2. Sift dry ingredients, saving 2 tbsps flour to coat fruit and nuts.
  3. Beat eggs well then add melted butter and buttermilk.
  4. Add this mixture to dry ingredients and stir only until moistened.
  5. Coat apricots and nuts with flour and fold into batter.
  6. Pour batter into 9 x 5 x 3 inch pan.
  7. Bake for about 1 hr.
  8. Cool on wire rack.
May be frozen 2-3 months.
