Recipe: Blueberry Bread

1 3/4 cups flour
1/3 cup granulated sugar
1/3 cup packing brown sugar
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 egg, beaten
1 orange, juice and rind
2 tbsps butter or margarine
Boiling water
1 cup blueberries
1 cup chopped nuts (optional)

Preheat oven to 350 degrees
Grease a loaf pan.
Stir one beaten egg in measuring cup.
Add juice and rind of orange and butter to measuring cup
Add boiling water to make 3/4 cup of liquid in measuring cup.
Stir liquid into dry ingredients.
Combine blueberries, nuts and 1/4 cup flour.
Add fruit mixure to batter folding very gently but thoroughly.
Pour batter into greased loaf pan.
Bake for 1 hr.
