Chicken Curry Recipe

• 3 pounds chicken (fryer), cut in serving pieces
• 1 tablespoon canola oil
• 1 onion, sliced
• 2 tablespoons curry powder
• 1 can (12 ounces) coconut milk
• 1 cup water
• salt to taste

1. Heat oil in large pot.
2. Saute sliced onion briefly, add curry powder and stir 3 minutes.
3. Stir in chicken.
4. Add coconut milk a little at a time.
5. Add 1 cup water.
6. Cover and simmer until chicken is cooked, 1/2 hour. Season with salt to taste.
