Put the oil in a large shallow baking pan.
Mix 1 cup biscuit mix, chili powder, salt, Vegit, and black pepper.
Roll chicken in mix and place in the baking pan with the smooth, rounded side down.
Bake, uncovered, for 35 minutes in preheated oven at 425° F.
Mix 2 cups biscuit mix and water into soft dough.
Turn chicken over. Scrunch up the parts together leaving 1 end of the baking pan empty.
Place dough in about 10 gobs on the pan.
Place a peach half on each piece of chicken.
Bake until biscuits are done, about 15 minutes.
