Chicken Cacciatore II Ingredients

• 8 pieces chicken, skin removed
• 1 can whole tomatoes
• 1 can tomato sauce
• 2 onions, sliced
• 2 cloves garlic, chopped
• 1 tsp salt
• 1/4 tsp ground pepper
• 1 tbsp basil leaves
• 1 bay leaf
• 1/2 cup white wine
• 1/2 tsp celery seed

To make Chicken Cacciatore

1. Heat 2 tbsp canola oil in a large non-stick skillet.
2. Add chicken, and cook until browned, turning often.
3. Remove chicken from pan, and add onions and garlic. Cook until onions are translucent.
4. Add salt, pepper, basil, bay leaf, tomatoes, tomatoe sauce, and celery seed. Mix well.
5. Return chicken to pan, and spoon sauce oven chicken pieces. Bring to a boil, then reduce heat and simmer for 30 minutes more.
6. Add wine, and simmer the Chicken Cacciatore until garlic thickens.
7. Serve Chicken Cacciatore over your favorite pasta.
