Recipe: Chicken Florentine

4 chicken breasts bone in
1/3 cup butter or margarine
1 1/2 tsps salt
1/2 tsp white pepper
1 can (6 ozs) frozen orange juice concentrate, thawed
1/2 tsp powdered ginger

Preheat oven to 350 degrees

1. Melt butter in saucepan.
2. Brush all sides of chicken with melted butter.
3. Mix salt and white pepper; sprinkle over chicken breasts.
4. Place chicken, skin side up, in a large shallow baking pan; do not let chicken breasts touch.
5. Bake, uncovered for 30 mins, basting occasionally with melted butter.
6. Add orange juice and ground ginger to remaining butter in saucepan; mix well and heat.
7. Remove chicken from oven; thoroughly coat both sides of chicken with orange juice mixture.
8. Bake 20 mins longer or until chicken is tender and glazed.
