Recipe: Cinnamon Zucchini Bread

- 3 eggs
- 2 1/2 cups sugar
- 3 tbsp vanilla extract
- 1 cup canola oil
- 2 cups grated zucchini
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 3 cups flour
- 1 cups chopped walnuts
- Mix everything together, gently folding in walnuts last.
- Pour into 2 large loaf pans or 4 small loaf pans.
- Bake at 325° F. for 1 1/4 to 1 1/2 hours.
