3 tbsp vanilla extract
1 cup canola oil
2 cups grated zucchini
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tbsp cinnamon
1 tsp nutmeg
3 cups flour
1 cups chopped walnuts

Mix everything together, gently folding in walnuts last.
Pour into 2 large loaf pans or 4 small loaf pans.
Bake at 325° F. for 1 1/4 to 1 1/2 hours.
