Ingredients in Corn Fritters and Sausage
1 1/4 cups unsifted flour
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 tablespoon vegetable oil
16 ounce can creamed corn
1 pound sausage, cooked per package instructions
To Make Corn Fritters and Sausage
Combine flour, baking powder, and salt in large bowl.
Beat together eggs, oil and corn in separate bowl.
Add egg and corn mixture to flour mixture and mix until all ingredients are just combined.
Place oil (1 inch deep) in skillet and heat over medium high heat.
Drop by tablespoons into hot oil in skillet.
Fry fritters on both sides until brown and cooked in center, about 5 minutes.
Fritters will be flat and look like pancakes.
Drain on absorbent paper towels.
Makes 32 (2 inch) fritters.
Serve with sausage and syrup.
