Curried Shrimp Hawaiian Style

• 6 tablespoons butter
• 6 tablespoons flour
• 1-1/2 teaspoons salt
• 1 cup coconut milk
• 2 cups milk
• 2 to 3 teaspoons curry powder
• 2 teaspoons ginger, finely chopped
• 1 medium onion, chopped fine
• 1/2 cup cooked carrots, chopped
• 1/2 cup cooked celery, chopped
• 1 potato, cooked and diced
• 3 cups cooked shrimps

1. Melt butter; add flour and salt and blend well.
2. Add milks, stirring. Simmer until thick and smooth.
3. Add curry powder, ginger, onion, carrots, celery and potatoes. Mix well.
4. Add shrimps and cook 2 to 3 minutes.
