2 eggs
2/3 cups canola oil
1 cup firmly packed brown sugar
1 cup whole wheat flour
1 tsp ground cinnamon
1 tsp sea salt
1 1/4 tsp soda
1 cup grated carrots

Cream Cheese Frosting

1 1/2 oz cream cheese
1/4 cup soft butter
2 cups powdered sugar
1/2 tsp grated orange peel
1/2 tsp vanilla extract

In a medium bowl lightly beat eggs; add oil and sugar and blend.
Stir the dry ingredients together in another bowl.
Stir dry ingredients into egg mixture just until blended.
Stir in carrots and walnuts.
Pour into a greased 8" square pan and bake in a 350° oven for 30 to 35 minutes.
Cool and frost. Serves 9.

To make frosting:

Cream together cream cheese, butter, powdered sugar, orange peel, and vanilla.
Cream together.
