Recipe: Fancy Egg Scramble

1 cup (4oz) diced Canadian bacon
1/4 cup chopped green onion
3 tbsps butter or margarine
12 eggs, beaten
3 oz can mushrom stems and pieces, drained
1 recipe cheese sauce (recipe to follow)
4 tsps butter or margarine, melted
2 1/4 cups soft bread crumbs
1/8 tsp paprika

Preheat oven to 350 degrees.
In large skillet, cook Canadian bacon and onion in 3 tbsps butter until onion is tender but not brown.
Add eggs and scramble just until set.
Fold mushrooms and cooked eggs into cheese sauce.
Turn into 12 X 7 X 2 inch baking dish.
Combine melted butter, crumbs and paprika; sprinkle on top of eggs.
Cover and chill (can be made a day ahead).
Bake for 30 minutes or until bubbly.

Cheese Sauce

2 tbsps butter or margarine
2 tbsps flour
1/2 tsp salt
1/8 tsp pepper
2 cups milk
1 cup shredded Cheddar cheese

Melt butter; blend in flour, salt and pepper.
Add milk.
Cook, stirring until bubbly.
Stir in cheese until melted.
