  1. Put the flaked fish to heat in a double boiler.
  2. Mix the egg yolk and cornstarch until light.
  3. Gradually add the milk while stirring.
  4. Add this mixture to the fish.
  5. Put fish over brisk heat, season with the salt, pepper, and nutmeg.
  6. Stir and cook until the sauce is as thick as molasses.
  7. Then drop in the butter, chopped fine, then add the sherry or other wine.
  8. Serve on squares of thin delicately browned toast on a heated platter.
