2 1/2 lb chicken, cut up
2 eggs
2 1/2 tsps salt
2 1/2 tsps celery salt
1 tsp paprika
1/2 tsp pepper
2 cups Ritz crackers - crushed
1 cup canola oil

Beat eggs, dip chicken in eggs.
Sprinkle with salt, celery salt, paprika and pepper.
Roll chicken in cracker crumbs.
Brown in canola oil in frying pan, turning frequently until done (approx 35 mins).
