- 2 1/2 lb chicken, cut up
- 2 eggs
- 2 1/2 tsps salt
- 2 1/2 tsps celery salt
- 1 tsp paprika
- 1/2 tsp pepper
- 2 cups Ritz crackers - crushed
- 1 cup canola oil
- Beat eggs, dip chicken in eggs.
- Sprinkle with salt, celery salt, paprika and pepper.
- Roll chicken in cracker crumbs.
- Brown in canola oil in frying pan, turning frequently until done (approx 35 mins).
