(Spanish Summer Vegetable Soup)

• 1 small cucumber
• 1 green pepper
• 2 - 4 fresh tomatoes
• 1 clove garlic, crushed
• 1 small onion
• 2 tbsp olive oil
• 2 tbsp wine vinegar
• 1/2 liter water
• pinch salt
• 6 slices white bread cubed without crusts

Clean, cut small and put into blender everything but bread cubes. Pour through strainer and chill. Serve very cold with croutons (and also dices of above vegetables if so desired). If too thick, add water. Serves 6.
