- 3 cups sliced, cooked carrots
- 1 cup pineapple bits, drained
- juice from pineaplle bits
- 2 tbsps brown sugar
- 1 tsp tapioca
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 tsp butter or margarine
- Preheat oven to 350 degrees.
- Mix carrots and pineapple bits in buttered baking dish.
- Combine pineapple juice, brown sugar, tapioca, salt, pepper and butter.
- Pour over carrots and pineapple.
- Cover and bake for 30 mins.
