Recipe: Grilled Whole Salmon

  1. Rinse whole salmon and pat dry.
  2. Remove dorsal fin (center back) by cutting along either side and then pulling forward. (You can have your fish market do this for you.
  3. If you cook fish whole, your need to wrap the head and tail in damp towels and aluminum foil.
  4. Season cavity and fill with lemon slices, onion, and parsley.
  5. Brush fish heavily with oil and place on grill covered with foil that has been poked with small holes.
  6. Add hickory chips to charcoal.
  7. Cover grill and cook about 20 mins and turn fish over.
  8. Fish is done when it flakes or reaches about 120° F.
  9. Remove from grill and place on board to skin.
  10. Can be served hot or chilled.
