Quantity 

• 2 cups dried lentils
• 2 medium onions, chopped
• 2 carrots, chopped
• 4 stalks celery, chopped
• 2 small potatoes, diced
• 3 sprigs parsley
• 3 cloves garlic, minced
• 28 oz can tomatoes, with liquid
• 1 bay leaf
• 1 tsp dried organic basil
• 1 tsp cayenne pepper
• 7-8 cups vegetable stock or water
• 3/4 tsp salt

In a large pot, combine all ingredients. Bring to a boil, cover, and simmer for 2-3 hours. Add freshly ground pepper to taste.
