Recipe: Low Sodium Bean Soup

Quantity 

• 1/2 cup sliced carrots
• 1/4 cup sliced celery
• 1/4 cup sliced onion
• 1 clove garlic, minced
• 6 oz medium egg noodles
• 1 tbsp olive oil or canola oil
• 1/3 tsp parsley flakes
• 1 can red kidney or cannelloni beans
• 1/3 of a 8 oz can unsalted tomato sauce

1. In a 3 qt pan, put the first 6 ingredients with 1 cup water Smmer for 10 minutes.
2. Add 2 1/2 qt water, rinsed beans, and tomato sauce Simmer 20 minutes
3. Add noodles and cook 20 minutes or until tender.

Soup will be thick

Soup tastes better if served the following day or divide into portions and freeze.
