Cook the 1 pound of penne pasta until tender, drain and cool.
Meanwhile, heat sugar, vinegar and oil in a 2 quart sauce pan until sugar is dissolved. Pour over noodles.
Cool, then add the diced cucumbers, diced onion, sliced mushrooms, garlic, parsley, sea salt, and white pepper. Mix together well.
Refrigerate for 3 hours and then stir before serving.
