Combine cooked ground turkey, tomatoes, tomato sauce, green chiles, and taco seasoning.
Bring to a boil; reduce heat and simmer 15 minutes.
In a small bowl whisk egg whites; add ricotta cheese and mix well.
Use a 9x13" glass baking dish.
Spread half of the seasoned meat mixture in bottom of pan; top with 4 tortillas cut to fit.
Spread 1/2 of ricotta cheese and 1/2 of grated cheese.
Repeat layering with turkey, tortillas and cheeses, ending with grated cheese on top.
Bake at 350° F. for 20 to 30 minutes.
Let stand 10 minute before cutting.
