- 2 (16 oz) cans of garbanzos, drained and skinned
- 1/4 cup chopped parsley
- 1 med. green pepper, chopped
- 1/4 cup red sweet pepper, chopped
- 1 med. tomato, diced
- 1/2 cup red onions, thinly sliced
- 1/4 cup red wine vinegar
- 3 tbsp olive oil
- 1 cup feta cheese, diced
- 1/2 tsp dill weed
- 1/2 tsp sweet basil leaves
- 1/4 tsp oregano leaves
- Freshly ground black pepper to taste
- Mix all ingredients together. Chill for at least 4 hours (overnight is best) before serving.
