• 2 tbsps shortening
• 1/2 cup sugar
• 2 eggs
• 1 cup corn flakes, broken (not crushed)
• 3/4 cup orange juice
• 1 cup flour
• 2 1/2 tsps baking powder
• 1/2 tsp salt
• grated rind of 2 oranges

1. Preheat oven to 400 degrees
2. Cream shortening and sugar together.
3. Add eggs and beat well.
4. Stir in the corn flakes and orange juice.
5. Sift the flour, baking powder, and salt and add to the creamed mixture.
6. Blend in the orange rind.
7. Fill buttered muffin tins 2/3 full.
8. Bake for 30 mins.

Servings: 1 dozen small muffins
