• 1 pound sharp Cheddar cheese, grated
• 2 sticks butter
• 3 cups flour
• cayenne pepper, 4 shakes
• 1 1/2 cups pecans, finely chopped

1. Combine cheese and butter, cream thoroughly, add cayenne pepper to taste.
2. Add flour and pecans and mix thoroughly. This will be stiff.
3. Shape in rolls no larger than a quarter. Refrigerate overnight.
4. Slice 1/4" thick and bake at 350° F for 10-12 minutes. Do not brown.

Can be frozen before or after baking.
