- 1 lb lean ground beef
- 2 tsps baking powder
- 1 tsp fine grind sea salt
- 1/2 tsp pepper
- 1/2 cup uncooked rice
- 3/4 cup milk
- 2 tbsps minced onion
- 1 qt tomato juice
- Preheat oven to 350 degrees.
- Thoroughly mix all ingredients except tomato juice.
- Form mixture into walnut size meatballs.
- Arrange meatballs in oven proof casserole dish.
- Pour tomato juice over the meatballs.
- Bake at 350 degrees for 1 1/2 hours.
