Recipe: Potato Onion Bake

• 4 medium potatoes, peeled and sliced
• 1 medium onion, cut into rings
• 2 small green onions, finely chopped
• 1 tsp salt
• 1 tsp dried parsley
• dash of pepper
• 2-3 tbsps butter or margarine
• paprika

Combine potatoes, onions, salt, parsley, and pepper in 1 1/2 quart casserole. Dot with butter. Microwave, covered, on 100% power high for 10 to 12 minutes or until potatoes are tender, stirring twice. Sprinkle with paprika. This may be made ahead and kept warm for picnics, etc. Serves 6.
