• 10 pounds potatoes, peeled
• 1 medium onion, diced
• 1 cup sugar
• 1 cup canola oil
• 1 cup vinegar
• 4 tsp sea salt
• 1 dozen hard cooked eggs, peeled and diced
• 1 quart of salad dressing
• 2 tbsp prepared. mustard

1. Cook the potatoes with the chopped onion.
2. In a 2 quart pot, combine the sugar, canola oil, vinegar, and sea salt.
3. Heat to dissolve the sugar and pour over potatoes and onion.
4. Cover and refrigerate at least overnight.
5. When ready to serve add the hard boiled eggs, salad dressing and mustard and mix well.
