  1. Trim excess fat from meat, cut into serving size pieces, and slash edges to prevent curling.
  2. Combine flour, dry mustard, salt, and pepper; use to coat meat.
  3. Reserve remaining flour mixture.
  4. In skillet brown meat, half at a time, on both sides in hot oil.
  5. Push meat to one side and stir in reserved flour mixture.
  6. Combine 1/2 cut water and Worcestershire sauce; stir into skillet.
  7. Cook and stir until thickened and bubbly; reduce heat.
  8. Cover and simmer meat in gravy 1 to 1 1/4 hours or until tender.
  9. Transfer meat to warm serving platter.
  10. Skim fat from gravy.
  11. Drizzle gravy over meat or pass with meat.
