Quantity 

• 1 cup mayonnaise
• 1/2 cup watercress
• 2 1/2 tsps capers, rinsed and drained
• 3/4 tsp Worchestershire sauce
• dash hot pepper
• 1/2 cup loosely packed fresh parsley
• 1 tbsp lemon juice
• 1 1/2 tsp dried tarragon, crumbled
• 1/2 tsp garlic
• salt and freshly ground pepper

Combine all ingredients in food processor and mix well. Excellent with whole grilled or chilled fish, such as salmon.
