Recipe: Scallop Chowder

Quantity 

• 1 quart milk (skim milk may be used)
• 1 pint scallops (1/2 pint of scallops if very small)
• 2 medium sized onions, sliced
• 2 medium sized potatoes, sliced
• 1/4 tsp salt
• 1/2 tsp white pepper
• butter

Combine first four ingredients in top of double boiler. Cook in double boiler until done (varies with thickness of sliced potatoes and onions). Add sea salt, and white pepper. Add butter to your taste. Serves 4.

White pepper is great in chowders because it's color blend with the chowder.
