• 1 lb fillet of beef or boneess sirloin steak
• 1/4 cup soy sauce
• 1 tbsp sugar
• 1/2 cup beef broth
• 1 tbsp sherry
• 1 cup onions, thinly sliced
• 1 cup celery, sliced
• 1 cup bamboo shoots, sliced
• 1/2 lb fresh mushrooms, thinly sliced
• 4 scallions with tops, cut in pieces
• 2 tbsp canola oil
• 1/4 tsp white pepper

Have meat fat trimmed and cut in 1/8 slices. Combine soy sauce, sugar, broth, and sherry. Prepare vegetables. Heat oil in heavy skillet. Add meat and stir fry. Pour 1/2 of soy mixture over meat. Add celery and onions; cook 3 minutes. Add remaining ingredients and remaining soy mixture. Cook 4 minutes. Serve immediately with rice. Serves 6.
