Recipe: Transylvanian Beef Stew

2 lbs beef chuck roast, cubed
1 tbsp canola oil
1 onion, chopped
1 tbsp paprika
1 can chicken broth
1/8 tsp ground black pepper
1 jar sauerkraut

Thickener:
1 tbsp unbleached flour
1/4 cup water

1. Heat canola oil in a large non-stick skillet. Add chopped onion and cook for 3-4 minutes.
2. Add beef, and cook for 8-10 minutes until brown. Then add paprika, pepper, and chicken broth. Cook until meat is tender.
3. Thicken gravy by first mixing 1 tbsp flour and 1/2 cup water in a cup, and then stirring the flour mixture into skillet. Cook for 1-3 minutes.
4. Drain sauerkraut and add to skillet.
5. Serve over mashed potatoes and top with sour cream.
