  1. Preheat oven to 325 degrees.
  2. Grease loaf pan .
  3. Beat eggs until light and foamy.
  4. Add oil and sugar, grated zucchini and vanilla.
  5. Mix slightly, but well.
  6. Sift together flour, salt, soda, baking powder and cinnamon.
  7. Add to the above mixture and blend well.
  8. Add nuts, if desired.
  9. Pour batter into well greased loaf pan.
  10. Bake at 325 degrees for 1 hour.
  11. Remove from pan and cool on rack.
