• 3 eggs
• 1 cup canola oil
• 2 cups sugar
• 1 tsp pure vanilla extract
• 2 cups raw, peeled and grated zucchini
• 3 cups flour
• 1 tsp salt
• 2 tsps cinnamon
• 1 tsp baking soda
• 1 tsp baking powder
• 1/2 cup chopped nuts (optional)

1. Preheat oven to 325 degrees
2. Grease and flour 2 loaf pans
3. Beat eggs until foamy.
4. Beat in oil, sugar and vanilla;mix well.
5. Mix in zucchini
6. Sift dry ingredients into mixture and beat.
7. Mix all ingredients well.
8. Fold in nuts.
9. Pour batter into 2 greased and floured loaf pans.
10. Bake for 55-60 mins.
11. Cool 10 mins before removing from pans.
