Recipe: Bittermelon with Pork
- 4 bittermelons
- 3/4 pound lean ground pork
- 3 water chestnuts, chopped
- 3 dried mushrooms, soaked and chopped
- 1/2 inch ginger, grated
- 1/2 teaspoon salt
- 1 tablespoon cornstarch
- 1 tablespoon green onion, minced
- 1 tablespoon soy sauce
- 1 tablespoon canola oil
- 1 tablespoon black bean, washed and mashed
- 2 tablespoons water
- 1/2 teaspoon salt
- Cut whole melons in 1-1/2 inch length and remove centers.
- Parboil and drain.
- Combine pork, water chestnuts, mushrooms, ginger, 1/2 teaspoon salt, cornstarch, green onion and soy sauce.
- Fill melons with mixture. Heat oil in pot and brown both ends of melon.
- Add black beans, water and salt.
- Cover and simmer 30 minutes, turning once.
- Remaining sauce may be thickened with cornstarch and water.
