Cut whole melons in 1-1/2 inch length and remove centers.
Parboil and drain.
Combine pork, water chestnuts, mushrooms, ginger, 1/2 teaspoon salt, cornstarch, green onion and soy sauce.
Fill melons with mixture. Heat oil in pot and brown both ends of melon.
Add black beans, water and salt.
Cover and simmer 30 minutes, turning once.
Remaining sauce may be thickened with cornstarch and water.
