Recipe: Eye of Round Roast
1 3-4 lb chuck roast
1 cup carrots, peeled and cut into 1 inch pieces
1/2 medium onion, peeled, and finely chopped*
1 can low sodium/low fat beef broth
1/4 tsp McCormick Table Grind Black Pepper
1/4 tsp McCormick Granulated Garlic
1 McCormick Bay Leaf
- Preheat oven to 350 degrees.
- Place roast in nylon oven cooking bag (or in a baking pan with lid)
- Distribute carrots, and onions evenly around roast.
- Season roast with pepper, and garlic.
- Place Bay Leaf on top of roast.
- Cover pan tightly with foil.
- Place in oven, and bake for 1 hour or until internal temperature reaches 170 degees.
Serve with mashed potatoes and gravy.
*Substitute a can of french onion soup for beef broth and onions. |
