Rosemary leaves-The leaves of the small evergreen shrub, Rosmarinus officinalis L.
Rosemary is one of the more potent herbs so it should be used with restraint for best effect. It can overwhelm food if used in quantity. It has a special affinity with lamb and it is compatible with and mixes well with many other spices. It also blends well with garlic and wine, making it an excellent addition to marinades for grilled meats.
Uses for Rosemary include:
- Crush 3/4 tsp. and add to 1 lb. ground beef.
- Add to spaghetti, barbecue, pizza, or lasagna sauces.
- Use on lamb, pork, and chicken.
