Recipe: Napoli Casserole
- 2 tbsps butter or margarine
- 1 cup milk
- 1 cup Mozzarella cheese, shredded
- 1 1/2 cup zucchini slices
- 1/4 cup chopped onion
- 1/2 cup chopped tomatoes
- 2 tbsps flour
- 1/2 tsp salt
- 1/2 pound Italian sausage mild
- 1 cup sliced mushrooms
- 2 cups noodles, cooked and drained
Preheat oven to 350° F. Make a white sauce with the butter or margarine, flour, milk, and salt. Add 3/4 cup of the cheese and stir till melted. Brown sausage in a skillet. Add the zucchini, onion, and mushrooms. Saute till tender. Drain any excess grease. Stir in sauce, noodles, and tomatoes. Pour into a 1 quart casserole. Top with remaining cheese. Bake at 350° F for 20 minutes.
