- 1 3/4 cups flour
- 1/2 cup sugar
- 2 1/2 tsps baking powder
- 3/4 tsp salt
- 1/2 tsp ground cinnamon
- 1 egg, beaten
- 3/4 cup milk
- 1/3 cup canola oil
- 1 cup chopped apple
- 2 tbsps sugar
- 1/2 tsp cinnamon
- Preheat oven to 400 degrees
- Grease muffin pans
- Mix thoroughly first 5 ingredients; make well in center.
- Blend eggs, milk, oil and apple; add at once to dry mixture.
- Stir just till moistened.
- Fill greased muffin pans 2/3 full.
- Mix 2 tbsps sugar and 1/2 tsp cinnamon; sprinkle on top of muffins.
- Bake 20 mins.
