This is an unusual and deliciously aromatic stuffing. Well worth a try. Makes enought to stuff a turkey or several chickens.

• 1 cup butter
• 2 onions, chopped
• 1 tsp ground cumin
• 1 rsp ground coriander
• 1 1/2 cups almonds, sliced
• 1 1/2 cups dried apricots
• 1 1/2 cups raisins
• 4 cups cooked bulgar wheat
• 2 tsp ground cinnamon
• 1 tsp ground cloves
• 1/8 tsp ground white pepper

1. Melt butter in a large pot and saute the onions until translucent.
2. Add the cumin, and coriander; Mix; then add the almonds, apricots and raisins. Cook over a simmer, stirring often, until nuts are browned.
3. Add the Bulgar wheat, and all other ingredients. Mix well.
4. Allow to cool before stuffing poultry.
